Bacolod shows off unique Sardines dishes in cooking contest

BACOLOD City – The city government of Bacolod has initiated an activity to inspire and teach people on how to prepare different unique dishes made of Sardines locally known as “tinapa” amid the coronavirus disease 2019 (COVID-19) pandemic.

Sardines are the usual relief goods distributed during quarantine due to COVID-19.

Councilor Israel Salanga, chairman of the city’s Commitee on Tourism, said that they came up with “Tinapa Home Cooking Challenge” to showcase the creativity of Bacolod residents in preparing various Sardines dishes despite the global health crisis.

About 100 residents joined the contest composed of senior citizens, housewives, professionals, laborers, and students, from 61 barangays here.

Salanga said the participants prepared recipes, from simple to complex ones.

Among the recipes showcased were Lasagna Sardines, Sardines Steak, Sardines Empanada, Tinapa Nachos, Sardines Pizza, Tinapa Siomai, Sushi Sardines, Shawarma Sardines, Tinapa Dumplings, Sardines Fishball, Tinapa Cheese Tortillas, Dynamite Tinapa, Sinigang Sardines, Sardines Sisig, Sardines Cheeseballs, Baked Sardines Stuffed in Bell Pepper, Sardines Potato Salad, Tinapa Banana Burger, Tinapa Pie, and Sardines Croquette with Sour Cream.

Criteria for judging included originality, taste, presentation or creativity, and with most number of heart reaction to the photos of their recipes posted on Facebook.

Salanga said he received comments online underestimating sardines as part of the government’s relief assistance to affected households during crisis.

“With this, we would like the public to look at the lighter and positive side of every situation and to be grateful for whatever is available that could help them in this trying times,” he added.
